Ingredients:
Dressing:
1/3 cup rice vinegar
1/3 cup olive or canola oil
1 tsp fresh ginger
2 scallions, chopped
Salt/pepper to taste
Salad:
2 romaine heads shredded
1 cup matchstick carrots
1 seedless cucumber, cut into ribbons w/ peeler or chopped
1 yellow pepper, cut into matchsticks
Chicken:
11/2 lb. boneless, skinless chicken breast
Instructions:
Lightly season chicken w/ salt/pepper marinate in ¼ cup dressing for 5 minutes then grill or sauté until cooked through. Cut into pieces.
Assemble salad. Add chicken. Toss lightly with additional dressing. Serve and enjoy.
