Ingredients:
Dressing:
¼ cup minced fresh cilantro
¼ cup sesame oil
3 tbsp lime juice
2 tbsp soy sauce
2 tbsp olive oil
1 tbsp ginger, minced
2 cloves garlic, minced
Salad:
1 package (5oz) fresh baby spinach
1 yellow pepper, cut into thin strips
8 cherry or grape tomatoes, cut in half
1 ½ pounds of fresh tuna, chicken, salmon, pork tenderloin or beef
Instructions:
Whisk together dressing. Use half to marinate 1 ½ pounds of fresh tuna or chicken or salmon or pork tenderloin or beef.
Combine salad. Toss lightly with remaining dressing.
Grill marinated protein – on skewer or in pieces over medium heat for 8-12 minutes. Serve w/ salad.
