Ingredients:
1 slice of bacon
1 large onion, thinly sliced
4 cloves of garlic, minced
1 tsp. Thyme
1 tsp. Fennel seeds
1 tsp. pepper
1 Bay leaf
1 cup dry white wine
28 oz. diced tomatoes
5 boneless skinless chicken thighs
Instructions:
Cook bacon. Transfer to paper towel. Crumble.
Add onion through tomato to crock pot. Mix. Add chicken and bacon for 3 hours on high or six hours on low.
Shred chicken and serve over noodles or rice.
