Ingredients:

4 Zucchini, chopped

Salt/pepper to taste

Salmon:

2 Tbsp brown sugar

2 Tbsp lemon juice

1 Tbsp Dijon mustard

2 cloves garlic, minced

½ tsp dill, dried

½ tsp oregano, dried

¼ tsp thyme, dried

Salt/pepper to taste

4- 5oz Salmon fillets

Instructions:

Pre heat oven : 400’F

  1. Lightly oil a baking sheet with non stick spray

  2. In small bowl mix together brown sugar, lemon juice, mustard, all spices. Set aside

  3. Toss zucchini with olive oil and salt/pepper.

  4. Rub salmon with herb mixture

  5. Place zucchini and salmon on greased pan in single layer. Cook 14-16 minutes. Serve warm.
