Ingredients:
1 tbsp soy sauce, reduced sodium
2 tbs Canola or Sesame oil
2 tbsp Cornstarch (split)
½ tsp dark brown sugar
1# Chicken breast, boneless, skinless
3 cloves garlic, minced
1 tbsp fresh ginger
1 scallion, minced
4 cups broccoli (fresh or frozen)
¾ Chicken stock
Zest of one lemon
Salt/pepper to taste
Instructions:
Wisk together soy sauce, 1 tbsp oil, 1 tbsp cornstarch and brown sugar. Toss with chicken.
In a separate bowl combine garlic, ginger, lemon zest, scallion and 1 tbsp oil
Spray non stick pan w/ cooking spray over medium heat cook chicken until no longer ping about 5-7 minutes. Remove from pan.
Add to pan garlic ginger mixture and stock whisk in 1 tsp cornstarch and salt/pepper to taste. Bring to boil for 2-3 minutes.
Add broccoli and cook for 3-4 minutes. Add chicken.
