Ingredients:
1½ Tbsb. light margarine
2 Tbsp. all-purpose flour
2 2/3 cups skim milk
8 oz. light cream cheese, cut in 1-inch chunks
1/8 tsp. black pepper
8 oz. reduced fat cheddar cheese, grated
6 cups cooked elbow or shell macaroni (3 cups uncooked)
Instructions:
Preheat oven to 350º. Melt margarine in saucepan. Add flour and whisk together (will be thick and lumpy). Gradually add skim milk 2 Tbsp. at a time, stirring with a whisk until mixture is smooth. Then add remaining milk. Cook over medium heat 8-10 minutes or until thick, stirring frequently. Gradually add cream cheese and cook until the cheese is melted. Add grated cheese and stir until cheese is melted. Remove from heat and pour over cooked pasta. Spoon into casserole dish and bake at 350º for 30 minutes.
