Ingredients:

2tsp Olive oil

1 onion, sweet, sliced thin

1 bell pepper, sliced thin

3 cloves garlic, minced

1# Green Beans (or mix yellow/green beans)

3 Beefsteak Tomatoes chopped or one 14.5oz canned diced tomatoes

¼ tsp kosher salt

Instructions:

Heat oil in non stick pan. Sauté onion, pepper stirring often until soft – 4-5 minutes.

Stir in garlic. Add green beans and 1/4c water. Cover and cook over low heat until beans are tender ~10 minutes. Stir in tomatoes and salt/pepper, cook 2-3 minutes. Serve.
