Ingredients:

1 ¾ c. All purpose flour

½ c. sugar

1tsp baking powder

¼ tsp salt

1 banana, ripe, mashed

1 tsp vanilla extract

1 large egg

1/3 c. pecans, chopped (toasted optional)

Instructions:

Preheat oven 350’F. Combine banana, oil, vanilla, egg in medium bowl – mix well. Add dry ingredients – flour, sugar, baking powder, salt – stir just till combined. Add pecans.

Shape dough on sprayed cookie sheet into 2 – 8” long rolls, flatten to ½”inch thick. Bake for 23 minutes. Cool 10 minutes. Cut each roll diagonally into 12 slices. Place slices cut size down – reduce oven to 250’F and bake an additional 15 minutes turn over and bake another 15 minutes. Remove from oven. Cool and serve.
